Salmon is one of the highest-leverage ingredients in any high-protein kitchen — packed with omega-3s, easy to season, and almost impossible to overcook if you know the rules.

Method 1 — Pan-seared with crispy skin. Pat dry, salt, skin-side down in a hot pan with a touch of oil. Don't move it. Flip after 4 minutes. Done.

Method 2 — Slow-roasted at 130°C. Buttery, restaurant-soft texture. 18–20 minutes. Worth the wait.

Method 3 — Citrus & miso glaze. Whisk white miso, mirin, soy and lime. Brush on, broil for 4 minutes. Sticky, savoury, addictive.
